Delicious and quick dessert made Rice and cooked in sugarcane juice

SUGARCANE KHEER

Ingredients

4 cups sugarcane juice
½ cup short grain (kolum) rice, soaked for 30 minutes and drained
6-7 green cardamoms
10-12 raisins
A pinch saffron strands + for garnishing
8 almonds, blanched, peeled and chopped

Method

1. Take rice in a non-stick pan. Add sugarcane juice, heat the pan and mix.
2. Crush the green cardamoms with the back of the knife and add to pan alongwith raisins and a pinch of saffron strands, mix and cook till mixture boils. Cover and cook for 5 minutes.
3. Remove the lid, mix and cook on medium heat till rice is done and mixture thickens.
4. Serve hot garnished with some chopped almonds and few saffron strands.
