SUN-DRIED TOMATOES AND PARMESAN CRACKERS - (Serves - 4)Ingredients3-4 sun-dried tomatoes⅓ cup parmesan cheese powder¼ cup unsalted butter½ cup refined flour + for dustingCrushed black peppercorns to tasteSalt to tasteMethod1. Preheat oven to 180° C. Line a baking tray with silicon mat.2. Take sun-dried tomatoes in a bowl. Add warm water and soak for 10-15 minutes. Drain and roughly chop. 3. Combine butter and chopped sun-dried tomatoes in a bowl and mix. Add flour, parmesan cheese powder, crushed peppercorns and salt and knead into a dough. Cover with cling film and refrigerate for 5-10 minutes.4. Dust the worktop with some flour, place the dough and roll out to make a ½ cm thick sheet. Cut into star shape using a star cookie cutter. 5. Place the stars on the lined baking tray. Put the baking tray in preheated oven and bake for 6-8 minutes. Remove from oven and cool.6.
