Serve it with dahi and enjoy a super comforting meal!SURAN KE PARANTHEIngredients300 grams yam (suran), peeled, boiled and mashedReadymade whole wheat flour dough as required1 tsp oil½ tsp cumin seeds2 green chillies, chopped1 medium onion, chopped¼ tsp turmeric powder¼ tsp red chilli powder¼ tsp cumin powder¼ tsp chaat masalaA pinch of garam masala powderSalt to taste2 tbsps chopped fresh mint leaves2 tbsps chopped fresh coriander leavesWhole wheat flour for dustingGhee for cookingYogurt for servingMethod1. Heat oil in a shallow nonstick pan. Add cumin seeds and once they start to change the colour, add green chillies, onion and sauté till translucent.2. Add turmeric powder, red chilli powder, cumin powder, chaat masala, garam masala powder, salt and mix well. Take the pan off the heat and allow to cool slightly.3. Take boiled yam in a bowl. Add the cooked onion mixture. Add mint, coriander and mix well.4. Dust some whole wheat flour on the surface, take a portion of the dough and make cavity in the centre.5. Stuff a portion of the yam mixture, bring the edges together and seal properly.6. Dust some more flour and roll into thick disk.7. Heat a nonstick tawa. Place the prepared parantha and cook for a minute on medium heat or till the underside is golden brown.8. Flip and cook on other side for a minute more.9. Drizzle some ghee, increase the heat and cook for 30 seconds on each side.10.
