Surmai/Mackarel Thkal is a Konkani CUisine Spicy Fish preparation as shown by our Home CHef Riya Kamat

SURMAI THIKHAL

4 pcs surmai ( king fish )
½ cup oil
1 tsp chopped ginger
1 tsp chopped garlic
1 tsp chopped green chilly
½ cup chopped onions
Few curry leaves
Pinch of hing
1 tsp chilly powder
1 tsp salt
2 tbsp kokum juice
4 kokam
For paste – 1 cup fresh grated coconut, ½ onion, 1 tbsp ginger, 1 tbsp garlic, 20 dry chillies, 2 tbsp coriander seeds.

Method-
➢ To make paste , Soak red chill & coriander in water for ½ an hour. Add coconut, onion, ginger& garlic make a fine paste.
➢ For curry, heat oil add ginger garlic & green chillies. Fry for 2 minutes. Add chopped onion & fry for 5 minutes.
➢ Add coconut paste, chilly powder, hing & fry well.
➢ Add kokum juice & kokum.
➢ Add fish & cook for 5-7 minutes. Add curry leaves.
➢ Garnish with chopped coriander.
