Try out this quick and easy recipe using the winter ingredient Surti PapdiSURTI PAPDI NU SHAAKIngredients200 grams surti papdi1 small fresh green garlic bunch2 tbsps white sesame seeds3-4 tbsps oil ½ tsp carom seeds (ajwain)1 inch ginger, finely choppedA pinch of asafetida (hing)2 small potatoes, cut into ½ inch cubes1-2 green chillies, finely chopped1 tsp cumin powder2 tsps red chilli powderA pinch of turmeric powder2 tsps coriander powderA pinch of sugar¼ cup scraped fresh coconut¼ cup + 2 tbsps chopped fresh coriander leaves + for garnish½ lemon¼ tsp garam masala powderChapattis to serveOnion wedges to serveMethod1. String surti papdi and halve them. Finely chop fresh garlic greens and cloves. 2. Dry roast white sesame seeds till golden and they start to splutter in a non-stick pan. Take the pan off the heat and transfer on to a plate.3. Heat oil in a pressure cooker, add carom seeds and cook till fragrant. Add chopped green garlic, ginger, and asafeotida and mix well. Cook till garlic turns golden brown.4. Add surti papdi and potatoes and sauté for 2-3 minutes. Add green chillies and mix.5. Add salt, cumin powder, red chilli powder, turmeric powder and coriander powder and mix. Cook for 1-2 minutes.6. Add ¾ cup water, mix, cover and cook for 2-3 whistles. 7. Open the cooker once the pressure reduces completely. Place it back on heat and add sugar, reserve 1 tbsp of toasted sesame seeds for garnish and add the rest. Add scraped coconut, ¼ cup coriander leaves and squeeze the juice of lemon and mix.8. Add garam masala powder, mix and add remaining coriander leaves, mix and take the cooker off the heat.9. Transfer into serving bowls and serve hot with chapattis and onion wedges.
