સુરતી સેવ ખમણી

Ingredients for Surti Sev Khamani are:

Split Chickpeas [चना दाल] - 2 cups
Curd [दही] - 40 gms
Green Chili [हरी मिर्च] - 8 pcs
Ginger [अदरक] - 1 piece
Garlic Cloves -15-20
Salt [नमक] - 2 tsp
Lemon Juice [निम्बू रस] - 1 1/2
Sugar [चीनी] - 2 tbsp
Turmeric Powder [हल्दी पाउडर] - 1 tsp
Baking Soda [बेकिंग सोडा] - 1 tsp
Oil [तेल] - To Grease
Oil [तेल] - 4 tbsp
Mustard Seeds [सरसों] - 1 tbsp
White Sesame Seeds [सफेद तिल] - 1 tsp
Green Chili [हरी मिर्च] - 2 (chopped)
Water [पानी] - 3/4 cup
Sev [सेव] - For Garnishing
Coriander [हरा धनिया] - For Garnishing (chopped)
Pomegranate [अनार] - For Garnishing

Steps for Surti Sev Khamani are:

- Take a mixer jar. Add soaked chana dal, curd, turmeric powder, salt, green chilies, ginger, and garlic. Blend the ingredients and prepare a thick batter.
- Transfer the batter to a bowl. Add baking soda and water to it. Mix properly.
- Grease a mold with oil. Drop the paste into it and level it up.
- Heat water in a deep vessel. Place a stand in it. Put the mold over the stand and cover it with a lid. Steam it for some time and then check the batter with a toothpick. If it does not stick then it is cooked.
- Heat oil in a saucepan, add mustard seeds, white sesame seeds, green chilies, and stir. Add sugar, lemon juice, and water. Boil it for a minute or two.
- Transfer the cooked batter to a bowl and crumble it. Add chopped coriander and tempered ingredients to the khamni. Mix everything properly.
- Plate it and garnish it with sev and pomegranate over it. Surti Sev Khamni is ready to eat.
