Sweet and Sour Lychee Chicken | स्वीट अँड सार लीची चिकन | Sanjeev Kapoor Khazana

Sweet and Sour chicken is quite a popular dish so, lets give it a seasonal twist and add some sweet, and flavourful lychees. Trust me, you are going to love it!

SWEET AND SOUR LYCHEE CHICKEN

Ingredients

300 grams boneless chicken thighs, cut into 1 inch pieces
12-15 litchis, peeled, pitted and vertically halved
Salt to taste
1 tbsp grated ginger
2 tbsps finely chopped garlic
2 tbsps oil
2 spring onion bulbs, thinly slice
1 fresh red chilli, finely chopped
2 tbsps tomato ketchup
1 tsp soy sauce + to serve
2 tbsps honey
1 tbsp white vinegar + to serve
White pepper powder to taste
2 tbsps corn flour slurry
2 tbsps chopped spring onion greens + for garnish
Burnt garlic fried rice to serve

Method

1. Take chicken in a large bowl. Add salt, grated ginger, and 1 tbsp garlic and rub the mixture well on to each chicken piece and set aside to marinate for 15-20 minutes.
2. Heat oil in a non-stick wok, add remaining garlic, and sauté for 1 minute on high heat.
3. Add spring onion bulbs, mix and cook on high heat for 1 minute. Add fresh red chilli and sauté on high heat for 1-2 minutes.
4. Add the marinated chicken on high heat for 4-5 minutes. Reduce the heat to medium and continue to cook for 4-5 minutes.
5. Add tomato ketchup and soy sauce and mix well. Add honey, mix and cook for 1-2 minutes.
6. Add 1 cup hot water, mix and cook for 1-2 minutes. Add the litchis and mix well. Cook for 1-2 minutes.
7. Add white vinegar and mix well.
8. Stir in the white pepper powder, adjust salt, and mix well. Add corn flour slurry, mix and cook till the mixture thickens slightly.
9. Add spring onion greens and take the pan off the heat.
10. Transfer the mixture in a serving bowl, and garnish with spring onion greens. Serve hot with burnt garlic fried rice, soy sauce and white vinegar.
