Salad prepared with the goodness of sweet corn not just makes it perfect for the season but is extremely yummy too!SWEET CORN SALADIngredients2 cups sweet corn kernels1½ tbsps butter1 tsp olive oilSalt to tasteCrushed black peppercorns to taste 50 grams tofu, cut into small cubes1 medium red capsicum, cut into small pieces1 cucumber, cut into ½ inch cubes1 small white onion, choppedDressing½ cup fresh cream1½ tbsps lemon juiceSalt to tasteCrushed black peppercorns to taste ½ tsp dried mango powder (amchur)½ tsp red chilli powder1-2 green chillies, choppedLollo rosso lettuce leaves as requireMethod1. Heat 1 tbsp butter and olive oil in a non-stick pan. Add sweet corn kernels, salt and crushed black peppercorns and sauté for 3-4 minutes. Take the pan off the heat and transfer into a bowl and allow to cool completely. 2. Heat remaining butter in the same pan. Ad tofu, salt and crushed black peppercorns powder and mix well. Sauté for 2-3 minutes. Transfer into the same bowl and allow to cool completely. 3. To make the dressing, take fresh cream in a bowl. Add lemon juice, salt, crushed black peppercorns, dried mango powder, and red chilli powder and mix well.4. Add green chillies and mix. 5. Add red capsicum, cucumber and white onion into the sweet corn-tofu mixture. Add the dressing and mix till well combined.6. Arrange the lollo rosso lettuce leaves on a serving plate. Place the salad on it. Garnish with mint leaves and serve immediately.
