Full of flavor and nutrients, these pan fried rajma and sweet potato cutlets are a healthy and tasty substitute to deep fried ones.SWEET POTATOES AND RAJMA CUTLETSIngredients¾ cup boiled kidney beans (rajma)½ cup boiled and grated sweet potatoes1 small onion, chopped1 inch ginger, finely chopped8-1 garlic cloves, finely chopped2-3 green chillies, chopped2 tbsps freshly chopped coriander leavesChaat masala to taste2 tsps Tata Sampann Red Chilli PowderSalt to tasteSemolina for coatingOil for shallow fryingCoriander leaf for garnishOnion quarters to serveLemon quarters to serveTomato ketchup to serveMethod1. In a food processor jar, add rajma and coarsely crush it. Transfer into a large bowl. 2. In the same bowl, add sweet potatoes, onion, ginger, garlic, green chillies, chopped coriander, chaat masala and add Tata Sampann Red Chilli Powder, salt and mix till well combined.3. Take semolina on a plate, take a portion of the prepared mixture and shape it into a cutlet. Coat with semolina and set aside.4. Heat sufficient oil in a non-stick pan, shallow fry each cutlet till golden and crisp. Drain on absorbent paper. 5. Garnish with coriander leaf.
