Healthy version of mashed potatoes recipe with the use of sweet potatoes.SWEET POTATO AND ROSEMARY MASHIngredients3-4 sweet potatoes, peeled, cut into cubes and soaked6-8 fresh rosemary sprigs + for garnishing1 tablespoon oil2 tablespoons butter1 tablespoon chopped garlic3-4 tablespoon fresh creamSalt to taste½ teaspoon red chilli flakes1 tablespoon chopped fresh parsleyJuice of ½ lemon¼ cup breadcrumbs¼ cup parmesan cheese powderMethod1. Heat sweet potatoes in a non-stick pan alongwith water, cover and cook till dried. Add some water again and cook till it dries. Mash the sweet potatoes.2. Heat oil and 1 tablespoon butter in another non-stick pan. Add garlic and sauté till golden. Add mashed sweet potatoes and mix well.3. Reduce heat, add cream, salt and torn rosemary sprigs, mix and cook till thick. Add chilli flakes, parsley and lemon juice, mix and cook on high heat for a minute.4. Remove the pan from heat, add remaining butter and mix well. Transfer the sweet potato mixture in a glass baking dish.5. Combine breadcrumbs and parmesan cheese in a bowl and mix well.6. Top the sweet potato mixture with breadcrumbs mixture. Place the dish on a baking tray, put the tray in preheated oven and bake for 10-12 minutes.7.
