Sweet Potato Hash Browns | Sanjeev Kapoor Khazana

A healthier alternative to the ultra popular and widely appealing breakfast dish, hash browns, this recipe is a must-try!

SWEET POTATO HASH BROWNS

Ingredients

2 medium sweet potatoes, peeled
Salt to taste
Crushed black peppercorns to taste
1 teaspoon fresh oregano
1 teaspoon fresh thyme
1 teaspoon chopped fresh parsley
2 teaspoons cornflour
Oil for greasing
Butter as required
Tomato ketchup for serving
Mustard sauce for serving
Fresh parsley leaves for garnishing

Method

1. Grate sweet potatoes in a bowl. Add salt, crushed peppercorns, fresh oregano, fresh thyme, parsley and cornflour and mix well.
2. To prepare one hash brown, heat a non-stick tawa and grease with some oil. Place a medium size cookie cutter, put in some sweet potato mixture, flatten to make a small thick disc and demould. Add some butter and cook on low heat from both sides till golden brown and crisp.
3. Garnish with parsley leaves and serve hot with tomato ketchup and mustard sauce.
