Grate sweet potatoes in a bowl. Add salt, crushed peppercorns, fresh oregano, fresh thyme, parsley and cornflour and mix well. 2. To prepare one hash brown, heat a non-stick tawa and grease with some oil. Place a medium size cookie cutter, put in some sweet potato mixture, flatten to make a small thick disc and demould.
