Fluffy, spiced and healthy sweet potato pancakes are very easy breakfast dish with the goodness of honey and walnuts which will become your kids favorite.*Ingredients:Sweet potato 2Eggs 2Vanilla essence 1/2 teaspoonCinnamon powder 1/2 teaspoonCoconut milk 1/4 cupMaida 1/2 cupBaking powder 1/2 teaspoonButter 3-4 teaspoonsWalnuts 1/2 cupHoney 1/4 cupChili flakes 1 teaspoon*Directions:1. Firstly boil the sweet potato, mash it and keep aside.2. Take a bowl, add eggs and whisk them by adding vanilla essence, cinnamon powder, mashed sweet potato, and coconut milk till it is smooth.3. In a plate add all purpose flour, baking powder and mix well4. Now add all purpose flour to the egg mixture and by mixing make it like a cake batter.5. Then pour the batter in heat pan, add butter and cook them both sides till they get a nice color6. Finally serve them by topping up with walnuts, honey, chili flakes.
