: Sweet Red Bean Paste Honeykki

Today I made red bean paste because I need it for a dessert I want to make.
Actually, I hate red beans. So, Im not used to them until now, after making this paste.
Homemade paste lasts much shorter than a store-bought one because I dont use preservatives.
It keeps for just 1 week, but the less the sugar in it, the shorter it lasts.
I used 500g red beans, but I recommend halving the recipe.

* Ingredients
500g, 250g, 1,
500g red beans, 250g sugar, 1tsp salt, water

* Recipe

1. Rinse the red beans under running water. Take out any beans that look off.

I skipped the soaking step.

2. In a pot, add red beans and water and bring to boil until small bubbles form. Strain and rinse.

You have to discard the water after the first boil or it will taste bitter.

3. Put new water and red bean again. And simmer on low heat for about 1 hour until beans are soft.

You can add water during the process if needed.

4. When the red beans are cooked through, turn off the heat and blend using hand blender.
Make it as smooth or coarse as you like.

5. Add and mix sugar and salt and stir constantly on low heat for 5-10min. It will harden as it cools.

6. Pour the paste in airtight container and refrigerate. Done!
