Swiss Roll | Sanjeev Kapoor Khazana

Freshly baked thin layered sponge cake topped with mixed fruit jam rolled over to make this delicious popular recipe.

SWISS ROLL

Ingredients

Mixed fruit jam for spreading
35 grams refined flour
Butter for greasing
30 grams cornstarch
2 eggs
100 grams castor sugar
3 egg yolks
1 teaspoon vanilla essence
2 egg whites
A pinch of cream of tartar
Powdered sugar for dusting

Method

1. Preheat oven at 180ÂșC. Grease a 17 X 12 inch aluminium
baking tray with some butter and line it with a parchment
paper.
2. Sieve together cornstarch and refined flour in a bowl.
3. Break eggs in a bowl. Add castor sugar and egg yolks and
whisk using an electric blender till light and fluffy. Add flour
mixture and fold. Add vanilla essence and fold well.
4. Take egg whites in a bowl. Add cream of tartar and whisk
using an electric blender till soft peaks are formed. Add to
flour-egg mixture and fold till well incorporated.
5. Put the batter in the greased baking tray and level it out. Place
the baking tray in preheated oven and bake for 6-8 minutes.
6. Remove from oven and dust some powdered sugar on top.
Invert the sponge onto another parchment paper and discard
the parchment paper. Spread some jam on top and roll the
sponge.
7. Slice the roll and serve.

Preparation Time: 15-20 minutes
Cooking Time: 8-10 minutes
