Ingredients for tandoori masala:
Cumin seeds (roasted) 2 tbsp
Coriander seeds (roasted) 2 tbsp
Fennel seeds (roasted) 1 tsp
Cinnamon sticks (roasted) 2
Green cardamoms (roasted) 14-15
Black cardamoms (roasted) 3
Cloves (roasted) 1 tsp
Black pepper (roasted) 1 tbsp
Star anise (roasted) 1
Mace (roasted) 1
Dried ginger (roasted) 1
Red chilie powder 1 tbsp
Kashmiri chili powder 1 tbsp
Salt 1 ½ tbsp
Turmeric powder 1 tsp
Tatri 1/2 tsp
Orange food color 1 tsp
Ingredients for dough:
All-purpose flour 3 cups
Instant yeast 2 tsp
Sugar 1 tsp
Salt to taste
Yogurt 1/4 cup
Warm water as required
Ingredients for filling:
Oil 3 tbsp
Chicken (boiled & shredded) 2 cups
Onion chopped 1/2 cup
Cabbage chopped 1 cup
Tandoori masala 1 ½ tbsp
Salt to taste
Ingredients for cream sauce:
Cream 1/2 cup
Mayonnaise 1 cup
Salt to taste
Black pepper 1/2 tsp
Lemon juice 3 tbsp
Garlic paste 1 tbsp
Mint (chopped) 2 tbsp
Ingredients for assembling:
Cheese (mozzarella & cheddar) as required
Black olives as required
Pizza sauce as required
Oregano as required
Directions for dough:
In a bowl mix flour, salt, sugar and yeast. Then add yogurt, and knead soft dough by gradually adding water.
Cover it with cling and let it proof for 1 to 2 hours until double in size.
Directions for tandoori masala:
Add cumin, coriander, fennel seeds, cinnamon sticks, cardamoms, black cardamom, cloves, star anise, mace and dried ginger in a grinder.
Grind until you get fine powder, transfer in a bowl mix red chili powder, Kashmiri chili powder, salt, turmeric, tatri and orange food color.
Your tandoori masala is ready. Set aside.
Directions for filling:
In a pan heat oil, sauté onion for a minute then add chicken and cabbage.
Season it with tandoori masala, salt and set aside. Your filling is ready.
Directions for cream sauce:
In a bowl add mayonnaise, cream, salt, black pepper, lemon juice, garlic and mint.
Mix all these ingredients well and your sauce is ready. Set aside.
Assembling:
Cut the dough into four equal parts. Roll out one part into thin oval shape.
Spread pizza sauce, chicken, cream sauce, olives, cheese and wrap it in shawarma shape.
Sprinkle oregano on top, and bake in a preheated oven at 180 degrees for 15 to 20 minutes until light golden brown.
You can cook it in a pan as well, cover the lid and let it cook on medium low flame until light golden brown.
Your tasty tandoori shawarma is ready to serve.

Preparation time: 20 minutes
Cooking time: 25-30 minutes
Serving: 3-4
