Try it soon and serve it to your kids when they ask for an interesting dish but you want to make it slightly healthier.TANDOORI MUSHROOM CROSTINIIngredients8-10 button mushrooms3 tbsps Nutralite Tandoori Mayo½ baguette1 medium onion4 tsps oil3 tbsps chopped fresh coriander leaves4 cherry tomatoesMicro greens for garnishMethod1. Remove the stems of the button mushrooms and chop them along with the stems. Chop the onion finely.2. Heat 2 tsps oil in a shallow nonstick pan. Add the chopped onion and sauté till translucent.3. Add the mushrooms and sauté on high heat for 3-4 minutes. Transfer in a bowl and allow to cool slightly. Add coriander, Nutralite Tandoori Mayo and mix well.4. Cut the baguette into 8 slices.5. Heat remaining oil on a nonstick tawa. Place the bread slices and toast on medium heat for 2 minutes on each side or till crisp.6. Halve the cherry tomatoes.7. Transfer the toasted bread slices on work top. Top up with the prepared mushroom mixture and place the cherry tomatoes on top.8.
