Toasted Baguette slices topped with a creamy, smoky and mushroomy mixture and some fresh cherry tomatoes. This Italian-style appetizer is going to be a favourite for your kids as it gets done in no time with minimum ingredients which are probably there in your fridge already. Try it soon and serve it to your kids when they ask for an interesting dish but you want to make it slightly healthier.

TANDOORI MUSHROOM CROSTINI

Ingredients

8-10 button mushrooms
3 tbsps Nutralite Tandoori Mayo
½ baguette
1 medium onion
4 tsps oil
3 tbsps chopped fresh coriander leaves
4 cherry tomatoes
Micro greens for garnish

Method

1. Remove the stems of the button mushrooms and chop them along with the stems. Chop the onion finely.
2. Heat 2 tsps oil in a shallow nonstick pan. Add the chopped onion and sauté till translucent.
3. Add the mushrooms and sauté on high heat for 3-4 minutes. Transfer in a bowl and allow to cool slightly. Add coriander, Nutralite Tandoori Mayo and mix well.
4. Cut the baguette into 8 slices.
5. Heat remaining oil on a nonstick tawa. Place the bread slices and toast on medium heat for 2 minutes on each side or till crisp.
6. Halve the cherry tomatoes.
7. Transfer the toasted bread slices on work top. Top up with the prepared mushroom mixture and place the cherry tomatoes on top.
8. Garnish with micro greens and serve.
