Taquitos | Sanjeev Kapoor Khazana

These Mexican style tortillas have a crunchy exterior and soft juicy filling inside - each bite is satisfying.

TAQUITOS - (Serves - 4)

Ingredients

8 mini tortillas
1 tablespoon olive oil + for greasing and brushing
1 tablespoon chopped garlic
3 tablespoons boiled corn kernels
4 asparagus, blanched and chopped
1 teaspoon chopped pickled jalapenos
1 teaspoon mixed dried herbs
Salt to taste
¼ cup baked beans
2 tablespoons grated mozzarella cheese
2 tablespoons grated processed cheese

Method

1. Preheat oven to 180° C.
2. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add corn kernels, asparagus, jalapeno, mixed herbs, salt and baked beans, mix and cook for 1 minute.
3. Switch off heat, add mozzarella cheese and processed cheese and mix well.
4. Put some corn kernel mixture on one side of each tortilla, wrap and insert 2 toothpicks to seal.
5. Grease a baking tray with some olive oil, place prepared tortillas and brush some olive oil on top. Put the baking tray in preheated oven and bake for 5 minutes.
6. Serve hot.
