These Mexican style tortillas have a crunchy exterior and soft juicy filling inside - each bite is satisfying. TAQUITOS - (Serves - 4)Ingredients8 mini tortillas1 tablespoon olive oil + for greasing and brushing1 tablespoon chopped garlic3 tablespoons boiled corn kernels4 asparagus, blanched and chopped1 teaspoon chopped pickled jalapenos1 teaspoon mixed dried herbsSalt to taste¼ cup baked beans2 tablespoons grated mozzarella cheese2 tablespoons grated processed cheeseMethod1. Preheat oven to 180° C.2. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add corn kernels, asparagus, jalapeno, mixed herbs, salt and baked beans, mix and cook for 1 minute.3. Switch off heat, add mozzarella cheese and processed cheese and mix well.4. Put some corn kernel mixture on one side of each tortilla, wrap and insert 2 toothpicks to seal.5. Grease a baking tray with some olive oil, place prepared tortillas and brush some olive oil on top. Put the baking tray in preheated oven and bake for 5 minutes.6.
