TAWA MASALA ONION KULCHAIngredients1½ cups refined flour (maida) + dusting½ tsp baking powder½ tsp sugarSalt to taste2½ tbsps butter + to serve¾ cup milk2 medium onions, finely chopped2-3 green chillies, chopped1 tbsp dried pomegranate seeds, roasted and crushed½ tbsp coriander seeds, roasted and crushed½ inch ginger, grated¼ tsp chaat masala2 tbsps freshly chopped coriander leaves¼ tsp turmeric powder½ tsp Tata Sampann Garam MasalaDried fenugreek leaves (kasuri methi) for sprinklingGhee for drizzlingDal to serveOnion rings to serveLemon wedge to serveMethod1. In a large bowl, add refined flour, sugar, baking powder, butter and salt. Add milk and mix well. Knead to soft dough, cover with damp muslin cloth and set aside for 10-15 minutes.2. Meanwhile, add onions in a bowl, sprinkle a little salt and mix well. Set aside for 5-10 minutes.3. Spread the onion on another muslin cloth and squeeze out the excess waterand transfer into another bowl.4. Add green chillies, anardana, coriander seeds, ginger, chaat masala, and chopped coriander.5. Add turmeric powder, Tata Sampann Garam Masala and mix well.6. Take a portion of the prepared dough, shape it into a ball. Dust with flour and make a cavity in the centre and seal it.7. Slightly flatten it. Dust with flour again and slightly roll it into a disc. 8. Heat a non-stick tawa, place the kulcha on it and apply a little water on top. Sprinkle a little kasuri methi on it. Cook from both sides till golden brown specks appear. Apply ghee on each side and take it off the heat.9.
