TEA CRÈME BRULEE

Ingredients

½ cup brewed tea
½ cup fresh cream
Butter for greasing
3 egg yolks
3½ tablespoons castor sugar + for sprinkling
Few drops of vanilla essence

Method

1. Preheat oven at 180ºC. Grease individual ramekin moulds with some butter.
2. Heat cream in a non-stick pan. Add tea, whisk and bring to boil.
3. Take egg yolks in a bowl. Add castor sugar and whisk well till light and fluffy. Add vanilla essence and whisk. Add tea-cream mixture gradually and whisk well. Set aside to cool.
4. Pour the mixture into greased moulds and cover with aluminum foil. Put them onto a baking tray and fill the tray with some water.
5. Place the baking tray in preheated oven and bake for 20-25 minutes.Remove from oven and refrigerate to chill.
6. Sprinkle some castor sugar evenly on top and brulee the sugar using a blow torch.
7. Serve.

Preparation Time: 20-25 minutes
Cooking Time: 35-40 minutes
