Tequila Fired Chipotle King Prawns | Sanjeev Kapoor Khazana

TEQUILA FIRED CHIPOTLE KING PRAWNS

Ingredients:

8-10 king prawns, deveined and slit lengthwise
Salt to taste
2 teaspoon lemon juice
1 tablespoon chipotle in adobo sauce
2 tablespoon oil
1 tablespoon garlic, finely chopped
2 tablespoons finely chopped onion
2 tablespoons finely chopped mixed bell peppers
½ tablespoon finely chopped fresh coriander
2-3 tablespoons tequila
Lettuce leaves for garnishing
Lemon wedges for garnishing

Method:

1. In a bowl marinate the prawns with salt, one teaspoon lemon
juice, chipotle sauce and refrigerate for ten minutes.
2. Heat oil in a non-stick pan. Add garlic and onions and sauté till
they turn translucent.
3. Add bell peppers and sauté for a minute.
4. Add marinated prawns mixture and sauté for two-three
minutes over medium heat.
5. Add lemon juice and coriander. Mix well.
6. Pour tequila in a ladle and heat it over gas flame for about
thirty seconds and add it to the prawns. Mix well and remove
from heat.
7. Serve on the bed of lettuce leaves garnished with lemon
wedges and serve hot.
