THAI CRUNCHY SALAD WITH PEANUT DRESSINGIngredients½ cup shredded cabbage½ cup shredded red cabbage 1 small carrot, cut into thin strips1 medium cucumber, peeled and diced ¼ cup edamame beans, shelled1 medium red capsicum, cut into thin strips½ cup roasted peanuts1 tablespoon honey1 tablespoon rice vinegar1 teaspoon lemon juice1 teaspoon soy sauce1 inch ginger, roughly cut3-4 garlic cloves½ teaspoon red chilli flakes1 tablespoon chopped fresh coriander leaves2 spring onions, chopped3-4 Chinese cabbage leavesMethod1. Put cabbage, red cabbage, carrot, cucumber, edamame and red capsicum in a mixing bowl and mix. 2. Put roasted peanuts, honey, rice vinegar, lemon juice, soy sauce, ginger, garlic and red chilli flakes in a mixer jar and grind to a smooth paste. Transfer into a small bowl.3.
