Thai Cucumber Salad I The Buddhist Chef

This sweet and tangy summer salad of cucumber, green onions, and peanuts with just a hint of heat is always a hit at picnics and potlucks!

2 tbsp soy sauce
3 tbsp rice vinegar
2 tbsp maple syrup
1 tsp teaspoon sambal oelek or 1/4 tsp crushed red pepper
1 large cucumber, cut into thin slices
2 green onions, chopped
1/4 cup chopped peanuts

In a bowl, mix together the soy sauce, rice vinegar, maple syrup and sambal oelek.
Add the cucumber slices and green onions and mix well.
Top with chopped peanuts and serve.
