Happy Cooking!THAI LETTUCE WRAPS WITH MINCED CHICKENIngredients1 medium iceberg lettuce head2-3 tablespoons oil1 medium onion, finely chopped1 inch piece ginger, minced6-8 garlic cloves, minced1 cup chicken mince1 teaspoon fish sauce2 teaspoons soy sauce1 teaspoon red chilli flakes2 teaspoons lemon juice2 tablespoons brown sugarSalt to taste2 spring onion greens, finely choppedRoasted and crushed peanuts for garnishChopped fresh coriander for garnishThai sweet chilli dipping sauce for garnishMethod1. Cut the stem of the lettuce and refrigerate till required.2. Heat oil in a nonstick pan. Add the onion and sauté till light brown. Add the ginger, garlic and continue to sauté. Add the chicken mince and cook for five to seven minutes. Add fish sauce, soy sauce and mix well.3. Add chilli flakes, lemon juice and brown sugar and mix well. Add salt, spring onion greens and mix well.4. Separate the lettuce leaves to make cups.5. Arrange the lettuce cups on a serving plate an place the chicken mixture on other side of the plate. Keep the roasted peanuts, coriander and Thai chilli dipping sauce separately.6.
