Thai Red Curry Chicken Recipe with Eggplants Thai Girl in the Kitchen

Today I'm gonna show you how to make Thai red curry chicken easily at home.
This recipe I'm using Thai eggplants as vegetable of choice.
It doesn't always have to be eggplants. You can find the alternative vegetables that will go great in red curry below the ingredient list.

Let's see what we need!

Recipe: Thai Red Curry Chicken with Thai Eggplants | Thai Girl in the Kitchen

- 500g Chicken [Any part you like. Most recommended chicken thighs with or without bones]
- 4-5 tbsp Thai Red Curry Paste
- 300g Thai Eggplants
- 3g Kaffir Lime Leaves (5-6 leaves)
- 15g Thai Basils (If you don't have, you can substitute with sweet basils)
- Red Chilis/Pepper for garnishing
- 800ml Coconut Milk
- 300-350ml Water
- 2 tbsp Palm Sugar
- 3 tbsp Fish Sauce


Alternative Vegetables : Pumpkin, squash, potatoes, aubergine, any type of gourd, zucchini, bamboo shoots, young coconut shoot.


Serve with rice noodles(KanomJeen) or hot steamed rice.
Some eggs and vegetables.
