If you're looking for something light and yummy, this Thai-style soup is just perfect.THAI SHRIMP SOUPIngredients1 tbsp Thai red curry paste10-12 medium shrimps, washed, deveined and cleaned2 tbsps oil2 tsps finely chopped garlic½ tbsp grated ginger¼ cup chopped spring onion bulbs4-5 button mushrooms, sliced1 small red capsicum, cut into thin strips½ tbsp fish sauce1-2 tsps soy sauce1 cup coconut milk2 cups fish stock2 tbsps chopped spring onion greensCrushed black peppercorns to tasteSalt to tasteFresh basil sprig for garnishMethod1. Heat oil in a non-stick pan. Add garlic, ginger and spring onion bulbs and sauté for 1 minute. 2. Ad button mushrooms and red capsicum and sauté for 1-2 minutes. Add Thai red curry paste and 2-3 tbsps water and sauté for 1-2 minutes.3. Add fish sauce and soy sauce and sauté for 1 minute. Add coconut milk and mix well.4. Add fish stock, mix and let it come to a boil.5. Add the shrimp and mix well. Cook for 3-4 minutes. 6. Add spring onion greens, crushed black peppercorns and salt and mix well.7. Serve hot garnished with crushed black peppercorns and basil sprig.
