Bread slices topped with a thai inspired cottage cheese mixture and sesame seeds and baked to crisp perfection. THAI TOASTIngredients4 white bread slices1 tablespoon Green Thai curry paste 1 teaspoon olive oil + for brushing1 cup grated cottage cheese (paneer)1 teaspoon soy sauce 1 teaspoon red chilli flakes Salt to taste ½ teaspoon sugar + for sprinklingWhite sesame seeds for sprinklingFresh coriander sprigs for garnishingMethod1. Preheat oven to 180° C.2. Heat 1 teaspoon olive oil in a non-stick pan. Add Green Thai curry paste and sauté for 2 minutes. 3. Add 1 tablespoon water and mix. Add cottage cheese, soy sauce, chilli flakes and salt, mix and cook for 1 minute. Add sugar and mix well. Transfer in a bowl and cool. 4. Trim the edges of each bread slice and further cut into 4 squares. 5. Place the squares on a baking tray and brush some olive oil. Spread some cottage cheese mixture and again brush some olive oil on top. Sprinkle some sesame seeds and sugar on top.6. Put the tray into the preheated oven and bake for 5-10 minutes. 7.
