Ingredients Needed:

Bread:
Poolish-
- 220g bread flour
- 220g water, room temp
- heaping 1/4 teaspoon instant yeast

Finished Dough-
- 375g bread flour
- 257g water, room temp
- 12g fine sea salt
- 1/2 teaspoon (grams?) instant yeast

Spicy mayoli:
- 1/2 cup (120g) mayonnaise
- 3 cloves garlic, grated
- 2 tablespoons (30g) sriracha
- juice of 1 lemon
- salt and pepper to taste

Filling:
- 1/3 cup Spicy Mayoli (save the rest in the fridge)
- 4 slices gouda cheese
- 4 slices chedar cheese
- 2 large tomatoes (gonna brulee)
- 12 good slices mortadella, seared
- 4 large eggs, fried
- fresh basil leaves
- Spicy Mayoli
