The Best Homemade Gifts: Baci di Dama: Hazelnut Cookies w:Chocolate

Baci di Dama are two hazelnut cookies that are sandwiched together with melted chocolate. These Italian cookies go great with coffee and make the perfect Holiday gift.

Ingredients
8 ounces unsalted butter, softened
1 cup confectioner's sugar
2 teaspoons pure vanilla extract
1/4 teaspoon salt
1 large egg, at room temperature
2 and 1/4 cups all-purpose flour
1 cup finely ground toasted hazelnuts or almonds
2 cups semi-sweet chocolate chips
Instructions
Preheat the oven to 325 F, 160 .

In the bowl of a tabletop mixer fitted with the paddle attachment add the butter, sugar, salt, and vanilla extract. Beat until fluffy and scrape down the bowl in between beating so that all of the ingredients are incorporated.

Add the egg and beat until incorporated. Scrape down the sides of the bowl and beat again.

Add the flour in 2-3 batches and beat until incorporated.

Add the ground hazelnuts and beat until incorporated.

Transfer the dough to a lightly floured surface and roll out into a 1/2-3/4-inch thick rectangle. Cut the dough into 5-6 strips.

Take a small portion of dough and shape the dough into about 1-inch balls and place the balls on a baking tray that has been lined with parchment paper.

Chill the cookies in the freezer for about 15 -20 minutes.

Bake the cookies for about 20 minutes. They will be golden around the edges and pale in the center.

Allow the cookies to cool completely.

Melt the chocolate chips in a heat safe bowl either over a double boiler or in the microwave.

Place a small dollop of the chocolate on the flat side of the cookie and top with another cookie.

Place the cookies back onto the baking tray to set completely.

Serve the cookies with tea or coffee and enjoy!

Notes
Store the cookies in an airtight container.

Alternatively, roll the cookies out on a lightly floured surface to 1/4 inch in thickness and use your favorite cookie cutter to cut them out. Bake and drizzle chocolate on top or dust with confectioner's sugar.
