The BEST Meal Prep Dish | Tastemade

Make these breakfast burritos as your Sunday meal prep! Perfect for a quick and easy breakfast, weekday lunch or post-workout snack.

Ingredients
1-2 tbsp butter
4-6 eggs
1/2 can black beans, crushed
2-3 chorizo sausages
1/2 an onion, sliced
1/2 a red pepper, sliced
Salt & Pepper
1/2 a Lime
1/4 cup Cilantro, roughly chopped
1/3 cup cheddar cheese, shredded
4-6 large whole wheat tortillas

Steps
1. Start by scrambling all your eggs in a non-stick skillet with a tablespoon or so of butter. Place in a bowl and set aside.
2. Remove the sausage from its casing and cook over medium heat until cooked through. Pour the fat into a disposable container and discard. Add in the onions and peppers and sauté until soft. Add a good pinch of both salt and pepper and squeeze in half the lime. Remove from heat and stir in the cilantro.
3. Build each burrito by spooning some of the sausage mix onto a tortilla. Add the egg, black beans and sprinkle over some cheese. Roll tightly and wrap with wax paper and then a layer of tin foil.
4. Freeze for up to 1 month. To use, remove foil and waxed paper. Place one burrito on a microwave-safe plate. Microwave on high for 2 to 2-1/4 minutes, turning burrito over once. Let stand for 20 seconds. Eat plain or top with salsa, sour cream and sliced avocado.
