the munchies challenge (vegan) hot for food

it's the vegan munchies challenge and we made a vegan freak shake and a mac and cheese burrito... all to celebrate 4/20!

** JOHN'S MAC & CHEESE BURRITO **
1 box daiya mac & cheese
1 field roast italian sausage, chopped
1 tsp vegetable oil (for cooking sausage)
1/4 C pickled jalapeos, roughly chopped
1/4 C red onion, finely chopped
2 large tortillas
ketchup
hot sauce

1. Prepare the instant mac & cheese as per instructions.

2. While the noodles are boiling you can heat the chopped vegan sausage in a pan over medium heat with vegetable oil and brown it.

3. Once the mac & cheese is mixed with the sauce, stir in chopped jalapeos, onion, and sausage.

4. Heat the tortillas in a pan or on a flat top to make them more pliable to roll.

5. Roll mac & cheese in the tortilla and grill on either side for 4 minutes until golden brown and neatly pressed.

6. Wrap the burritos in tin foil or parchment paper for easy munching!

7. Mix together 2 parts ketchup and 1 part hot sauce for a spicy dipping sauce.

** LAUREN'S FREAK SHAKE **
1/3 C vegan chocolate chips
1 tbsp coconut oil
1/2 C frozen strawberries
1 1/2 frozen bananas
1 1/2 C vanilla coconut ice cream (Coconut Bliss)
1 1/2 C chocolate peanut butter coconut ice cream (Coconut Bliss)
1/2 C non-dairy milk (I used canned coconut milk)
1/4 C salted peanuts, roughly chopped
1 vegan peanut butter cup, cut into quarters

1. In a small sauce pan melt together chocolate chips and coconut oil. Stir until well combined and remove from the heat to prevent over cooking.

2. In another sauce pan heat up frozen strawberries until melted, then mash with a fork or potato masher to make a chunky puree / sauce. Set aside while you prepare the ice creams

3. Blend together vanilla ice cream with frozen bananas until it resembles soft serve. This can be done in a high powered blender or food processor. Keep in the freezer until ready to assemble the shake.

4. Then blend together the chocolate peanut butter ice cream and non-dairy milk of your choice to make a smoother/runnier layer of chocolate milk shake.

5. Assemble with a layer of vanilla/banana ice cream on the bottom, then strawberry sauce, then chocolate peanut butter milk shake and another scoop of vanilla/banana ice cream on top.

6. Drizzle chocolate sauce on top and sprinkle with chopped peanuts.

7. Place pieces of peanut butter cups on the top and munch immediately!
