Banh Mi, a Vietnamese sandwich that is perfectly balanced and equally delicious. If you haven't tried one yet, be sure to go do so immediately. We put our own spin on it but the heart is there (even if we haven't tried an authentic one yet), it is the thought that counts, and by thought I mean the delicious thoughts my tongue has while it tastes this heavily creation.

ALSO! IF you want to make your own ground meat but have no meat grinder, look no further. But what is that you say? You don't have a food processor either, no worries, you don't need that ish, I figured out a way to grind meat without meat grinder or food processor! First of its kind.

Chicken Meatball Banh Mi

Ingredients

Frozen Chicken Thigh (or Ground Chicken)
Garlic
Ginger
Cilantro
Salt
Pepper
Soy Sauce
Fish Sauce
Rice Vinegar
Carrot
Cucumber
French Baguette

- Grate frozen chicken (or if you have ground chicken skip this). Chop garlic, ginger, and cilantro. In a bowl mix chicken, garlic, ginger, cilantro, soy sauce, and fish sauce. Form into meatballs and sear on all sides till brown. Once browned cover and let it cook through. In a bowl combine rice vinegar, soy sauce, and salt. Add shredded carrot, and cucumber and mix together. Cut open toasted French baguette, add chicken meat balls, raw cucumber slices, pickled veggies, cilantro, sweet chili sauce and mayo! Close and enjoy!
