Puff pastry enclosed with a three cheese mixture and spices, baked and serve hot.THREE CHEESE SPINACH PUFFSIngredients½ cup grated cottage cheese½ cup grated gruyere cheese¼ cup grated processed cheese½ medium bunch spinach leaves, shredded250 grams puff pastry sheet 2 teaspoons butter1 teaspoon olive oil6-8 button mushrooms, chopped3-4 shiitake mushrooms, chopped½ cup crushed corn kernelsSalt to tasteCrushed black peppercorns to tasteMethod1. Preheat oven to 180° C. Line a baking tray with silicon mat.2. Heat butter in a non-stick pan. Add olive oil and button mushrooms and sauté for 1 minute. Add shiitake mushrooms and sauté for 1 minute. Add corn kernels and sauté for 1 minute.3. Add spinach, mix and cook for 1 minute. Add cottage cheese, gruyere cheese and processed cheese and mix. Add salt and mix. Add crushed peppercorns and mix well. 4. Dust the worktop with some flour, place the sheet and roll out into thin rectangle sheet. Cut the sheet into 2 inch rectangles. 5. Put some mushroom mixture in the center of each rectangle, brush some water on the edges, fold to make a rectangle and seal the edges. Press the edges with the back of the fork, coating with cornstarch to create a pattern.6. Put the puffs onto the lined baking tray. Put the tray into the preheated oven and bake for 20 minutes.7.
