Chicken baked with fresh thyme, garlic and wine - tastes great with bread or steamed rice.

THYME BAKED CHICKEN

Ingredients

800 grams chicken, cut into 1 inch pieces on the bone
4-5 fresh thyme sprigs
8-10 garlic cloves
¾ cup white wine
2 tablespoons lemon juice
Salt to taste
Crushed black peppercorns to taste
1½ cups chicken stock

Method

1. Preheat oven at 200° C.
2. Heat a non-stick grill pan. Add chicken pieces and grill till golden brown from all sides.
3. Add garlic cloves and mix. Add wine and boil for 2-3 minutes.
4. Add thyme sprigs, lemon juice, salt, crushed peppercorns and chicken stock, mix and boil for 3-4 minutes.
5. Transfer the chicken with the liquid into a glass baking dish and cover with an aluminium foil. Put the dish in the preheated oven and bake for 20 minutes.
6. Serve hot.
