Til Murgi (Chicken in sesame sauce) | Chef Ananya Banerjee

Cuisines of eastern India are still very much unexplored and new for many of us. My recipe today is inspired by one of the famous Khasi dishes from Meghalaya called dohneiiong, which is a pork dish cooked with black sesame seeds. In my recipe, I am changing the pork to chicken and making it in sesame sauce and calling it ‘Til Murgi’ or ‘Chicken in sesame sauce’.
This dish can be made with very basic and minimal ingredients. The key ingredient in this recipe is, of course, black sesame which gives the dish a unique flavourful and colour to it. You can easily find all the ingredients anywhere and make this delicacy at home. Do let me know how it was.

Ingredients:
1 cup boneless chicken
1 cup onion, finely sliced
1 tsp ginger paste
1 tsp garlic paste
2 tbs onion paste
1 tbs black sesame seeds
1 tsp crushed black pepper
4-5 green chilis, slitted in the middle
Mustard oil as required
Salt as per taste
Sugar as per taste

Method:
1.Marinate the chicken with salt, ginger, garlic and onion paste
2.Meanwhile, roast the sesame seeds and the black peppercorns till it released a nice fragrance. Grind the peppercorn, sesame seed and 2 chilis into a fine paste. Add as little water as possible.
3.Heat mustard oil and fry the onions.
4.Add the marinated chicken and fry it for 2-3 minutes and then cover it till it is mostly done.add the green chillies
5.Add the sesame paste to the chicken.
6.Drizzle some mustard oil over it and it is ready to be served
