Tindora fry/ Dondakaya Vepudu is a very popular Andhra style preparation where the tindora vegetable are finely sliced deep fried and tempered with seasoning.
Indian gherkin cooked with crunchy nuts

Ingredients
1 tbsp broken cashewnuts
1 tsp channa dal
1 tsp chilli pdr
1 bunch chopped coriander
2 number chopped gr chilli (optionalzz0
1 tbsp coconut pdr
pinch 0 cumin seeds
1 springs curry leaves
pinch 0 hing ( optional)
pinch 0 mustard
1 tbsp oil
1 number red chilli
1 lbs tindora
pinch 0 turmeric
1 tbsp urad wash

Directions
• fry thinly sliced tindora and keep aside
• heat oil add tempering of red chilli , mustard,cumin,channadal,urad wash,broken cashew,curry leaves,
• add salt ,chilli pdr ,turmeric,coconut pdr and saute add fried tindora and toss
• serve hot with chapati ,rice
