TOAD IN A HOLEIngredients3-4 chicken sausages1 cup beaten eggs1 cup refined flour (maida)1 cup milk1 medium onion1 tablespoon HP sauce ½ teaspoon crushed black peppercorns½ teaspoon mixed herbs1 tablespoon oilSalt to tasteMethod1. Preheat oven to 180 C.2. Put equal quantities of flour, eggs and milk in a mixing bowl and mix well to make a batter without any lumps. 3. Dice the sausages and put them into six muffin moulds 4. Pour the egg custard into the muffin moulds and bake in the preheated oven for ten to fifteen minutes.5. To make the glaze, slice an onion. Heat oil in a non-stick pan, add onion and sauté for two to three minutes.6. Add crushed black peppercorns and mixed herbs. Add HP sauce and some water and mix and cook for a few minutes or till the mixture reduced slightly. Add salt and switch off heat.7.
