Hi everyone! Hope you’re enjoying this rather cool springtime weather we’re having. Have to say I kinda miss the warmer weather...anyway, today we have Tofu Soboro!!! A lighter version of the very popular obento, Soboro-Don, which is often made with flavored ground chicken, minced egg, and snow peas over white rice. If you like, make some extra tofu soboro and enjoy it throughout the week! Toss a spoonful on your favorite salad, make some tacos, or add to your favorite omelette! So versatile! I hope you enjoy the flavors! Recipe: Serves 22 cups cooked brown rice1 block (300g) firm tofu5-6 red leaf lettuce, shredded1/3 green onion, thinly sliced 1/2 avocado, pitted and dicedSoboro sauce: 1 tablespoon sake2 tablespoons mirin3 tablespoons soy sauce or tamari 1-2 teaspoon coconut sugar1. Wrap tofu in paper towel and drain excess water. 10-15 minutes. 2. In the meantime, shred red leaf lettuce, thinly slice green onion, dice avocado. 3. Heat a medium pan on high heat, add tofu to the pan as you break apart with your hands. Turn down heat to medium and evaporate the water. 4. Add sake, mirin, soy sauce or tamari, coconut sugar and combine. Simmer until the sauce has absorbed and the tofu is “dry”, like chicken. 5. In a bowl, add rice.
