Tomato Capsicum Masala | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

This sabzi is delectable. Th taste of the Tomato Capsicum Masala is enhanced by the perfect blend of spices used as well.

CORN CAPSICUM MASALA

Ingredients

½ cup boiled corn kernels
1 medium green capsicum, cut into ½ cubes
1 tablespoon oil
1 tablespoon ginger-garlic paste
1 large onion, grated
1½ cups tomato puree
1½ teaspoons coriander powder
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
Salt to taste
1-2 green chillies, finely chopped
2-3 tablespoons grated mawa/khoya
3-4 tablespoons fresh cream + for drizzling

Method

1. Mix together oil, ginger-garlic paste and onion in a microwave proof bowl and cook in microwave on high (100%) for 5 minutes.
2. Add tomato puree, coriander powder, chilli powder, turmeric powder, salt, green chillies, mawa and 1cup water, mix and cook in microwave on high (100%) for 8 minutes.
3. Add corn kernels, capsicum cubes and garam masala powder, mix and cook in microwave on high (100%) for 4 minutes.
4. Add 3-4 tablespoons cream and mix well.
5. Drizzle some cream on top and serve hot.
