TOMATO SAUCE PASTA

In this episode I'd like to share with you my version of tomato sauce pasta recipe. It is one of our favorite sauces. I prepare the sauce with fresh tomatoes in the summer, but I use my homemade canned tomato sauce, for the winter. If desired, you can use the same sauce with cooked bulgur instead of pasta for a lower glycemic index.

INGREDIENTS

1 package (500 gr.) pasta
1 large onion
1 large carrot
1-2 celery stalk
2 cloves garlic
2 1/2 cups of canned tomato sauce
1 real tablespoonfull tomato paste
1/2 tsp granulated sugar
Salt & black pepper
2 tbsp butter
Olive oil
To garnish:
Parmesan cheese or Turkish Aged Kashar
Fresh basil or parsley leaves


DIRECTIONS

Finely chop the onion and celery.
Peel the carrot and grate.
Heat 3-4 tbsp olive oil in a skillet.
Saut the onions for 7-8 minutes until tender, stirring occasionally over medium low heat.
Add the whole or chopped garlic and cook for 1 minute, stirring constantly.
Add the celery and carrot then mix, cook for 3-4 minutes.
Add the tomato paste and mix well.
If desired, you can use fresh tomatoes, after blending in a blender or a food processor.
Or you can use homemade canned tomato sauce.
Add 2 1/2 cups of tomato sauce and mix.
Add 1/2 tsp sugar and mix.
Add 1 cup water, reduce the heat to the lowest possible setting and leave the lid
slightly ajar, then let simmer for 40 minutes.
When cooked, check for seasoning then add salt and pepper to taste.
My sauce is already salty, so I only add freshly ground black pepper.
Turn off the heat.
If desired, you can store the sauce for up to 2-3 days in the refrigerator or 6 months in the freezer.
When ready to serve, fill a large pot with water and bring to a boil over medium high heat.
Set the timer according to package instructions.
Add 1 real tablespoonful salt into the boiling water.
Add the pasta and mix immediately.
Cover, to bring it back up to the boil rapidly.
Make sure to start the timer.
Stir occasionally, then when it comes to a boil, open the lid.
Reserve 1/2 cup of pasta water, then drain the pasta.
Reduce the heat and melt 2 real tablespoonfull butter, (or heat 3-4 tbsp olive oil)
Add the reserved pasta water then the pasta and mix.
Transfer the cooked pasta into a serving dish and add the sauce on top.
Add freshly grated cheese then garnish with fresh greens.
Last but not least, drizzle with olive oil and serve immediately.
