Hot green chillies, fragrant garlic and season’s freshest Toovar dana, blended together in a chutney, which you can relish with a bhaakri.TOORICHI CHUTNEYIngredients200 grams fresh pigeon peas (toovar dana)15-20 garlic cloves10-12 light green chillies4 tbsps oilSea salt to taste1 tsp cumin seedsBhakri for servingMethod1. Heat a pan. Add garlic and dry roast on medium heat for 4-5 minutes or until golden brown. Transfer in a parat and set aside.2. Break green chillies and add to the same pan. Dry roast for 4-5 minutes. Transfer in the parat and set aside.3. Heat 2 tbsps oil in the same pan. Add the toovar dana, sea salt and sauté for 4-5 minutes. Transfer in the parat and set aside.4. Transfer the roasted chillies, garlic and toovar dana in a blender jar and grind to a coarse paste.5. Heat remaining oil in the pan. Add cumin seeds and once they start to change the colour, add the ground mixture and cook on 2-3 minutes on medium heat.6.
