Gluten-Free Banana Carrot Dog Cake
INGREDIENTS:
For 3-tiered 6” cake rounds
For the batter:
3 cups oat flour
2 tsp baking soda
3 cups grated carrot
½ cup coconut oil
½ cup sugar-free peanut butter
1 ripe banana
2 eggs
For the frosting:
½ cup plain, sugar-free Greek yogurt
¼ cup sugar-free peanut butter

STEPS:
1. Preheat oven to 350°F. Line a 9x13” baking pan with parchment paper and coat with nonstick cooking spray.
2. Mash the banana in a bowl and mix with the egg, coconut oil, peanut butter, and grated carrot. Then add oat flour and baking soda and mix until fully combined.
3. Transfer the thick, doughy batter into the prepared baking pan and smooth the top. Bake until the cake is golden brown and a tester inserted into the center comes out clean, about 30–35 minutes. Remove cake from the oven and place on a wire rack to cool.
4. Meanwhile, make the frosting by combining the yogurt and peanut butter until smooth.
5. Invert the cake onto a flat surface. Using a 6” cake ring, punch out two rounds from cake. Cut out two half moons with the rest of the cake scraps to form the middle cake layer.
6. Assemble: On a plate or cake stand, place one whole cake round in the center. Spread one-third of the frosting, top with the two half moons, spread another layer of frosting, top with the final whole round and then spread the rest of the frosting on top.
7. Insert a cake topper of your choice, slice, and serve!

DIY Dog Bunting Cake Topper
INGREDIENTS:
Canon PIXMA TS5320 Printer
Canon Restickable Photo Paper
Scissors
String
2 wooden Skewers

STEPS:
1. Create a bunting message design and small dog bone designs of your choice or use ready-made templates. Print your designs using the Canon PIXMA Printer and Canon Restickable Photo Paper.
2. Cut enough strings to accommodate your bunting message. Cut out the bunting letters and dog bones.
3. Peel off the restickable photo paper backings, and then fold the letter bunting over the strings and press to properly seal.
4. Tie the strings around the skewers and stick the dog bone design over the top ends of both skewers.
5. Arrange the spacing of the bunting to your liking and insert into the top of your cake!
