INGREDIENTS (serves 2-3)
3 big bell peppers (red, yellow and green)
3-4 garlic cloves
1/3 cup olive oil
Salt & pepper

DIRECTIONS
Rinse and drain the peppers.
Take one pepper, cut off the stem, remove the seeds.
Then cut into similar sized pieces, I like to cut into strips.
Repeat the same until all is done.
Pour olive oil into a large pan.
Slice garlic cloves, add on top.
Start heating over medium low heat.
Once sizzling, remove and discard garlic cloves, making sure not to burn them.
Transfer peppers to the pan, sprinkle a pinch of salt and pepper.
Turn up the heat to medium.
And sautee until slightly tender, stirring occasionally.
Check for doneness, cooking time may vary depending on the size of the pieces.
It usually takes me about 8-9 minutes.
Sprinkle a tiny pinch of salt & pepper, mix.
Turn off the heat.
Transfer to a serving plate with a slotted spoon.
Cover and refrigerate the leftover frying oil for up to a few days, and use it in a stir-fry.
You can serve Tri-color sauteed peppers hot, warm or cold, whatever your heart desires!
