We Tried Making Xiao Long Bao! Mastering a Dish EP 3

Mandon's final recipe:

Ingredients
1 streaky bacon
300ml pork broth
4 stalks of spring onion
3tsp gelatin powder
500g minced pork
1 knob of ginger
2.5 tbsp shaoxing wine
150g all-purpose flour
110ml water

Directions for broth:
1) Render the fat out of the bacon by cooking it at a low heat in a pot
2) Add in the pork broth, 2 slices of ginger a stalk of spring onion and bring to a boil. Let simmer for 1 hours
3) Bloom gelatin powder in 10ml of water for 3-5 minutes
4) Remove ingredients from the stock and add in the gelatin mixture
5) Once the stock comes to a boil, pour it on a baking tray and let it rest in the freezer until frozen

Directions for filling:
1) Finely chop up 3 stalks of spring onions, mince the ginger and add them to the minced pork along with the shaoxing wine
2) Mix it thoroughly and let it sit in the fridge for 30-60 minutes

Directions for dough:
1) Slowly add water to the dough in a mixing bowl, stirring the flour as you add the water in
2) Work and knead the dough for 15-20 minutes
3) Cover the dough with a cloth/ plastic wrap and let it rest for an hour
4) Cut the dough into equal pieces weighing about 12 grams
5) Roll out the dough into discs with a diameter of 8cm, leaving also the center to be thicker than the outside
6) Place 1/2tbsp of the meat filling and 1/2 tbsp of the soup gelatin in the middle of the dumpling skin.
7) Pleat as many folds as you can (the goal is 18!)
8) Steam the dumplings for 8 minutes and it's done!
