Truffle Risotto & Parm Crisp

A solid risotto recipe should be in every cooks back pocket and especially when you have some good truffled up ingredients lying around in need of some attention. Ingredients:
1 cup arborio rice
1 tbsp olive oil
2 tbsp minced onion
1 cup white wine
2-3 cups chicken stock, warm
2-3 tbsp truffle butter
truffle salt to taste
1 tsp truffle oil
3-4 tbsp shredded parmesan + 3-4 tbsp more for crisp
basil to finish (florets if on hand)
1 tbsp creme fraiche (optional, extra creamy)
