Turai Tamatar ki Sabzi

Ingredient Quantity
Ridge Gourd (Turai) 3-4 no.
Moong Dal Vadi ½ cup
Cumin seeds 1 tsp
Onion chopped 1 no. (Big)
Ginger-garlic paste 1 tsp
Green chilli chopped 2-3 no.
Tomato chopped 3-4 no.
Coriander powder 1 tbsp
Turmeric powder ½ tsp
Red chilli powder ½ tsp
Garam masala powder ½ tsp
Salt to taste
Water 1 cup
Coriander chopped 1 tbsp + for garnish
Oil for cooking

Method:
1. Cut the head and bottom of the turai and peeled them.
2. Cut the turai into big slices. Keep it aside.
3. Heat 4-5 tbsp of oil in a pan, add moong dal vadi and fry till brown in color.
4. When Vadis are brown remove in a bowl and remove excess oil in another bowl. Keep 2 tbsp of oil in a pan.
5. Add cumin seeds and sauté till its splutter.
6. Add chopped onion, mix well and sauté for 1 min.
7. Add ginger-garlic paste, mix well and sauté for 1 min.
8. Add green chilli chopped, mix well and sauté for another 1 min.
9. Add chopped tomato, mix well and sauté for another 1 min.
10. Add salt, coriander powder, red chilli powder and turmeric powder, mix well and sauté for 4-5 min.
11. Add turai, mix well and sauté for 2-3 min.
12. Add water and mix well. Cover and cook for 5-6 min.
13. Add garam masala powder, chopped coriander and fried vadi, mix well and sauté for 30 sec.
14. Remove in serving bowl, garnish with chopped coriander and serve hot.
