Turkish Flatbread "Tirnak Pide" For Kebabs

Turkish flatbread pide, widely served with traditional kebabs and dishes "Trnak Pide" The name comes from the shape as we shape it with our fingers.
I am going to show you two ways to do it. I will make one with wheat bran or whole wheat flour for a richer taste and bake it in the oven. I will make the other one only with white flour to have a fluffy result and bake it on the stovetop as an alternative for those who don't have an oven or for the hot days :)
Then in the next episode, we will turn the pides into an Iskender kebab: One of the popular dishes of Turkey.
Ingredients For Whole Wheat Pide In The Oven:
500gr. bread flour (YOu can add some of the amount wheat bran or whole wheat flour, about 2-4 tbsp to make it richer and flavorful)
325ml. tap water
10gr. fresh yeast or 1 tbsp dry yeast
1 tsp salt
More flour to sprinkle
wheat bran to shape the pide
For shaping:
2 tbsp yogurt
1 tbsp molasses or egg yolk + 1 tsp oil
Baking papers
Ingredients For Soft Tirnak Pide On Stove Top:
1 cup lukewarm water
1 tbsp leveled dry yeast or 15gr. fresh yeast
1 tsp sugar
3 cups all-purpose flour
1 tsp salt
wheat bran to shape
For shaping:
2 tbsp yogurt
1/2 egg yolk
1 tsp vegetable oil
cast iron or nonstick pan with lid
