Turkish GOZLEME Flat Bread With Eggplant VEGAN Filling!

Making Turkish gozleme flatbread with beautiful vegan filling. It is so delicious that many people think it has meat in it when they try it.
It has onions, eggplants, pepper, tomatoes and seasonings.
I will show you how you can roll out the dough both with a rolling pin and an oklava "Turkish thin rolling pin".
Note: I used butter to brush the gozlemes but you can simply use olive oil to make it vegan.
Ingredients for Vegan Flat Bread Gozleme With Eggplants:
For the filling:
3-4 medium size eggplants
1 onion
2 tomatoes
4-5 mild or sweet green peppers
2-3 cloves of garlic (optional)
1 tsp tomato paste
4-5 tbsp olive oil
Salt, black pepper, and paprika to taste
For the gozleme flatbread dough:
300ml mix of water and yogurt (I added 2 heaped tbsp yogurt and add water and mixed)
about3+1/2 cups to 4 cups of flour
1 tsp salt
more flour to roll out the dough
Also, butter or olive oil to brush gozlemes when cooking.
