Turkish Kazandibi Milk Dessert Recipe It is Very Easy To Give This Color With Burnt Sugar

Today's recipe is traditional Turkish Kazandibi dessert, caramel-colored soft milk desserts with burnt sugar.
Our required ingredients are milk.
Rice flour
Corn starch
Granulated sugar
Margarine
vanilla powder
aluminum tray
First, I add two and a half liters of milk to the pot.
I do not use store bought milk, original 100% cow's milk and daily fresh milk.
I add half a liter of milk in a separate bowl.
I will add the other ingredients to the half liter of milk I reserved.
I add rice flour and corn starch
The starch and rice flour I used may have been a little too much, I gave you the recipe in a nice way in the ingredients list.
So, it would be better if you use less than a full glass rather than a full glass.
After mixing the ingredients, I leave 2.5 liters of milk on medium heat to boil.
I add a spoon of margarine
I stir it from time to time so that the milk does not curdle.

I froth the milk by whisking it a little to make it more delicious.
After the milk boils, I add sugar.
I wrote 3 cups of sugar, but if you like it very sweet, make it 4 cups, it makes it less sweet this way, but I like it this way.
I stir a few times to let the sugar dissolve.
I add the starch mixture into the milk.
Now it is necessary to stir until it boils
After it starts to boil, I take the pot off the fire.
I add the aluminum tray over the fire
I sprinkle granulated sugar on the tray.
There is no specific measure of sugar, so I add it to cover the bottom of the tray a little.
We wait for the sugar to caramelize for 3 minutes and 5 minutes.
We turn the tray over the fire and caramelize the sugar without burning it.
It will be exactly milky brown.
As the tray gets very hot, as you can see, the sugar continues to burn even after you take it off the fire. Be careful about this.
I smooth out the candies without scraping the tray with a spatula.
Now we will add some of the pudding of Kazandibi dessert to the tray.
Add enough to cover the caramelized sugar.
Now let's put the tray on the fire again.
I burn some more ingredients for 3-5 minutes.
After mixing it once, I smooth it with a spatula and wait for the bottom to burn a little, then turn the tray to the other side.
Since I have a big stove, this process does not take too long and is ready in 3-5 minutes.
The bottom of all of them should be slightly wrong and sticky, as you can see, once it is like this, the process is complete.
But do not think that this material will stick to the tray and come off, you will see at the end of the video that the material comes off very easily.
Now I add the rest of the pudding to the tray.
After smoothing it with a spatula, I leave the tray in a cool place to cool.
After the dessert has cooled for 4 hours, we start the slicing process.
First, I cut the edges with a knife, then I divide it into 20 pieces. You can also divide it into smaller pieces, so you can get 32 pieces from this tray, I will make it a little bigger.
After wetting the spatula, I remove the dessert from the bottom of the tray and it comes out easily, as you can see, there is no sticking.
Normally, it is necessary to wrap the dessert in the form of a roll, but since the dessert is a little thick in consistency, I think I am having trouble wrapping it in a roll, so I recommend that you use a little less starch setting, so if you make it according to the measurements I gave in the introduction, it will be suitable.
I doubled the flavors, it doesn't have to be a roll, it doesn't matter if you wrap it or not, so consistency is good.
I decorate the dessert by sprinkling some Pozant pistachios on it.
