In this episode I'd like to show you my mom's kofta recipe. These koftas are so easy to make and amazingly delicious, you won't regret trying! We usually prepare them in a big batch then freeze them for later use. You can make a half-batch, according to your needs.

INGREDIENTS

1 kg. (2 pounds) ground beef (not lean)
4 cups fresh bread crumbs
1 large onion
2 large eggs
1 cup fresh parsley leaves
2 1/2 tbsp KOFTE BAHARI
(meatball spiceblend - traditional blend for Turkish meatballs)
1/2 tbsp or to taste salt
1/2 tsp ground cumin
1/2 tsp ground black pepper
1/3 cup sunflower oil

DIRECTIONS:

Combine 4 cups bread crumbs, 2 1/2 tbsp meatball spiceblend, 1/2 tbsp or to taste salt, 1/2 tsp cumin and black pepper, mix then set aside.
Grate the onion into a large bowl.
Add the chopped parsley, ground beef and 2 eggs.
Knead for about 2-3 minutes, until well combined.
For Turkish Kofta, you need to knead everything well. This breaks down the meat and makes the resulting kofta incredibly tender.
Add the bread crumb mixture and knead for about 4-5 minutes.
Add the oil and knead for another 2-3 minutes.
Then form the whole mixture into a ball, grab with your hands and throw it into
the bowl from above.
Repeat this process 5-6 times then knead for another 2-3 minutes.
At this point, you can cook a few-tiny koftas and check for the seasoning.
If you want more or less of something, go for it.
Wet your hands with some water and form the mixture into desired shape.
Flattened meatballs or patties cook up the best!
We usually form them into oval-shaped patties.
Place the prepared patties on a parchment paper lined tray.
Repeat with remaining mixture and freeze them between layers of parchment paper.
Pack the frozen koftas into freezer bags and keep them in the freezer until needed.
Then grill, bake, fry or otherwise cook the kofta according to your recipe.
