Turkish Rolled Borek Recipe | Filo Pastry with Cheese
Make Turkish Filo pastry borek with cheese filling from scratch! It has a rich dough that rolls out easily with a rolling pin, very flaky and you can freeze it to have it ready any time you want.
Ingredients for Rolled Borek:
1 egg
1/2 cup vegetable oil
1/2 cup yogurt
1 tbsp soft butter
1 tsp salt
2 tbsp vinegar
1 cup water
about 4-5 cups flour
For the layers:
about 100gr. melted butter or a mix of butter and olive oil or vegetable oil
To roll out the dough (about 200gr. or more wheat or corn starch)
To brush the top:
2 tbsp yogurt
leftover butter oil mixture
1 egg yolk
For the white cheese filling:
about 400gr. Turkish white cheese / Feta cheese (you can mix it a bit with aged cheeses as well for a deeper taste)
big handful of chopped parsley

How to make the dough:
Add the wet ingredients into a mixing bowl and mix well.
Then add flour gradually to have a smooth dough that doesn't stick.
Turn the dough into balls. The size of the balls depends on the countertop. If you have big space and a long rolling pin (oklava) you can cut into 7-8 pieces. IF not better to work with smaller sizes like 10 pieces.
I rolled out the pieces in about 15cm in diameter with starch, covered and rested for about 30 minutes and continue to roll out using starch to make to borek as you see in the video.
